Hi everyone. I've been lurking for a while but first time posting. I make a fine version of UJSM and I'm about to start a new mash. I usually get 6-8 generations. I keep 4 carboys going and run all together in a 15G PS2 about once a month.
I want to know what yeast everyone is finding best results for sour mash. I've tried several with varying longevity. My current mash is on DADY but I have to add more yeast to each gen to get it going again.
I have to order more soon so I may just stick with DADY but what do yall like?

I have used ec 1118 with good results, down side is more expensive than daddy. Personally I like the daddy, use it for UJSM and all corn mash.
