Looking for a 5 or 6 gallon bill. I am assuming this is malted wheat. Not really looking for DW wheatgerm boil overs but something like a UJSM Wheat without backset and sweet not sour?

"I have used some wheat in my grain bills before,with good results,but havent done a all wheat.I think that if you used 6-8lbs of wheat malt,and 2-3lbs of 6 row malt,you would get the wheat flavor.I think most vodkas are refluxed anyway,and alot of flavor would be gone so using the barley for conversion wouldnt matter.I havent tried it because I make sugar wash into vodka,but it would be interesting to try.If you potstilled it,it would turn out a wheat whiskey,and I would like to see what that taste like.Stripping it with a potstill,and making cuts,you could see what it taste like,and if you didnt like it,reflux it all into vodka.

I suppose it is a right of passage per se. Enzymes needed? I was thinking ec1118 and its a cookpot with coil so I had thoughts similar th UJSM only wheat malt and go three times or more if it would hold stable. Thinking adding lemon juice/other to hold PH.

Your thoughts?

We are going on the UJSM at the buds place. Its going textbook so far on the second. Bud has a bokakob stone hybrid column if the wheat bill needs to go there for him to work along with the UJSM.

Looking for a Belvedere/Kettle one pot still type ending if possible.

"If you wanted to do it UJSM style,it will work,but I would do a mash with the wheat and 6 row first to start it with.You should use some backset after the first run to keep the ph down.I have done this with a mixed grain bill,and you can do 3 runs on the same grains.After 3 do a small mash with more wheat malt and 6 row,and start the mash with backset.Once its converted,you can get 2-3 more runs off of it.
