When cooking the per say wine, do you cook the whole batch and run it throufh again or what.

When I made my brandy, I distilled the wine leaving some of the wine undistilled. I had a 5 gallon batch and distilled 3.5 gallons. I ran the 3.5 gallons then filtered diluted the end product and then put the distillate back in with the 1.5 gallons of wine that I did not distill. It was wonderful. Remember not to distill sweet wine due to the fact that you could scorch the product. I sweetned after the fact. If you do not sweeten and only want to run dry finished wine than what you end up with is Grappa whick sells for about 50 dollars a split. I made Grappa and it is wonderful and has a wonderful grape overtone.
