2 tsp pure vanilla extract
3/4 cup brown sugar
1/3 or less skin of medium orange
1/4 or less skin of lemon
Small pinch of nutmeg
Smaller pinch of cinnamon
2 cloves


Ok I received this from a friend, it actually call for 2 cups of Bacardi Gold and 2 cups of water. I modified it using 95% and distilled water. I also adjust the sugar to taste, The actual recipe called for the ingredients to be boiled together and then the extract be mixed with the spirit. I gave that a try and it was not bad. However I placed all of it in a jar and allowed it to sit for 30 days and it was as close to Captain Morgans as I had tasted, just a little stronger of course.

do you let the spices sit in the mash after fermentation has stopped?

At your version of barrel strenth add your ingrediants and let steep for???

Then dilute and add a tea spoon of molassas if you've a mind too.

Keep in mind that finished abv should take into account all ingredient additions.

In a 3 liter jug filled 2/3 with 65%abv from a multi generation dunder ferment.

2-alligator chared white oak sticks
zest of one orange
4 or 5 dried appricotts
4 or 5 dried pineapple chucks
tea spoon of black tea
tea spoon of black pepper corns
1/2 tea spoon vinilla extract

Let it sleep for...............how long can you wait?

I dilute to proof and add the bit of molassas.
Then let the jellyfish settle (in the fridge) for a bit and strain through a double coffee filter.

Mine does not taste like Captain M's,,,,,,Thankfully.

Lots of ways to add your own take. One of the best parts about this hobby.

My feeling now is that I really do not want my likker tasting like a store bought."

This works better for me, instead of just putting in ingredients, like the vanilla extract, I would take the liquor as clear and filter it through a regular coffee machine/filter, with a tiny layer of cinnamon chunks and a vanilla bean, and honey comb, with 90% of the honey drained out of it. I haven't tried the other stuff yet, but this has been my favorite so far. Although I actually prefer it without the vanilla, so I'm leaving that out now.
