Cane juice is very perishable. It can be frozen to slow down the loss of quality, but needs to be used as quickly as possible.

Cane is grown in Florida, Lousiana, Hawaii south Texas and very small acerage in California.

Normal harvest season late fall through early Spring, depending on weather conditions. Percent sugar is around 8 to 12%.

In California fresh cane juice is served in Vietnamese restuants. I don't know about other areas.

I am in luck. A person where I work grows sugar cane and is going to give me 5 gallons next fall. I cannot wait to brew this and get it distilled. I will keep all posted on this one.
