One of my favourites is a simple sambucca, made using 'star anise'. I crush up a handful or so of star anise, and soak it in some 70-90% alcohol for a week or so. I then add an equal amount of water, and run it through a very small stove-top pot still, and collect the essence that comes through - keep distilling until the drips ,just, start turning the collection cloudy. Use this as an essence - add about 2-3 tbsp to 1L of 35% spirit, along with 1/2C sugar, and a healthy spoonful of glucose.
