can someone give me some advise rather quick? I did a recipe with strawberries I found on here, it was white sugar, brown sugar, honey and blended up strawberries, I used fruit/schnapps yeast I bought from here. I put it in a fermenter with a air lock and it's still going so I won't be able to run it tomorrow (saturday), but maybe Sunday or I'll take off of work Monday or Tuesday to run it.

my question is, do I need to let it settle or Clear for a day or 2 before I run it like you do with a sugar shine? my concern is it has fruit in it, I don't want it to turn to vinegar or go bad by letting it sit. and it's in the low 70's down here in south Louisiana so I don't have nowhere to put it where it would be cold.

your thoughts please??

well today is 5 days of fermenting and it's still going, slowing down some, NO replies from the GURU's on this site, so I guess I'll wing it! I expect it will stop tomorrow and Ill let it site on monday and take off of work to run it tuesday, 1 day to setle/clear..... I'll share the recipe if anybody wants, just ask.

you could just wait until the next time you are off. It would take a long time to turn to vinegar

ok thanks for that info, I was afraid since it was fruit it may go bad.
