Hello Chaps!

Another Newbie, expecting to make Ron Zacapa direct from the still.

Not ordered my still yet, so will be looking for guidance... But the goal is to produce sipping Rum from Panela and Brandy from anything with a sugar content.

Currently I make loads of very drinkable Hobo Fruit Wine that just need to go to the next level.
Can't wait to get the next chapter of this adventure started.

Welcome, nycVILLA. This is a great hobby to experiment with (safely) and once you get experience you can make whatever you want. Maybe even Zacapa if you can age it that long. What equipment are you looking at? Equipment depends a lot on the product you are looking to make. Anyway, Good luck and be safe.

Thanks for the welcome Hokey.
The goal ultimately is to create a sipping Rum made from Panela and fruit brandies in 5 gallon batches of wash.

Regarding your question on equipment, that is why I'm here on the forum.

I'm not sure which to buy, a Brewhaus Thumper rig with the larger 3" Connector or their Extractor Pro II Kit? Either will be mounted on a Premium 8 Gallon kettle.

Got any thoughts?

I have not dealt much with thumpers. From what I gather it is like another distillation in the same run. It gives you a higher ABV and allows more of the flavor through as well. Good for whisky, rum and flavorful stuff. Not sure if it is good for neutrals aks, vodka, gin etc. I've got the PSII HC and make mostly vodka, When I want to make whisky I just take out the middle of the tower and run in pot mode and it works perfectly. Someone else may chime in with their thoughts on thumpers.
