Family donated a lot of free-non free stone peaches to me the other day off their trees. made some for ferment and 6 quarts of sliced peaches. used a champagne yeast on it. I looked for a good recipe but everyone was using several pounds of peaches. i had about 5 gallons after peeling and destoning. cooked it for a while to soften it up and kill any of the natural yeast on it, then added some sugar, nutrient and water. started fermenting right away. it will go thru the machine when done and then in a small barrell. this is my first peach experiment. cant wait!
