Correct Scotty, Not sure where the name came from. My uncle who lived down the road had a farm and he would give my father the sows heads. My father would remove the eyes, brain etc boil the heck out of it to render what fat he could. Then remove most everything from the bone, boil that with aspic, pepper, allspice and a couple other seasonings. He then put it all into several layers of cheese cloth and pressed out what fat was still there. It was still a pretty fatty meat. Cooled it down in our cold cellar and its was ready to go. I think I remember him first soaking it in ice water to cool it quickly. Not sure though. It was 47 or 48 yrs ago. it was very tasty. We also had a large Blodgett pizza oven and a Hobart 32 qt mixer down there. Every one came to our house on Fri nites for My dad's famous sheet pan pizza. Ahhh the memories.
