This might sound like a dumb question but what proof works best to age rum. I have been aging right outta the still. prob about 75-80%. any ideas?????

I always age mine straight also.. I haven't made rum but don't see how it could be much different. From what I know most whiskeys anyway have to be atleast 51%+ going into the barrel so I'd say as your range is pretty good. I know they cut it to 80 proof after aging. I don't ever cut mine down after aging though so don't know what the water after diluting will do to it. My personal guess would be go ahead and age it strong unless you want it down to 40% to drink then personally I would cut it to about 60-70% age then cut on down. Now this is just my own opinion.. I don't really have any credentials on this.

Barcardi sells barrel proof 151, so 75%.

Most alcohols are aged 60% to 80%. Most whiskeys are talored to come out of the still at 70%. Rums, I'm not sure, but think it's about the same.
I'm just finishing the conversion of my pot still to start making rum. Going to start my mash this weekend then finish putting the still together.

I know LWTCS who is/was a respected poster on this site and the other and was dedicated to making rum seemed to like his to come off at about 90%. Not sure where he went though.

i am only on my second batch but can only get it to come off the still about 75%. I dont have any idea how to get it that high? any ideas on what he did?

Depending on what kind is still you have it wOnt get that high.. To can save a few runs and rerun them for a much higher proof. I personally wouldn't though unless you want a neutral.. No reason to work harder and re run something just to cut it down anyway.
