Stupid novice question. Can one bypass the wetting/sprouting corn kernel process by simply using corn flaked maize? was going to try my first corn based mash using Ian Smiley's basic recipe.

The short answer is yes. I used the flaked maize from the local brew shop. It is already cooked and crushed ready for doing a mash. I did a typical beer mash/extraction, 1 hour at 155F with some pale 2 row barley, OG 1.075. I let it ferment, whiskey yeast, for 3 weeks until clear and have been aging in a glass jar with toasted oak for 7 months. Not real impressed but it was my first all grain. Done as a pot still with a BrewHaus 3" column.

After 9 months in a gallon glass jug and 1 ounce of medium toast American oak it was very outstanding 110 proof whiskey. not incredibly hot but very smooth and warming. Damn it went fast. Now I need to make some more and wait again.
