"Does anyone know what yeast would give me a more authentic flavor for an all malt scotch - a strong ale yeast or champagne yeast such as 1118?
No turbos please (yuck)."

Get some whiskey distillers yeast with AG from rick.It will give you the flavor profile your looking for.I have used it on some all malt grain bills to make irish whiskey and it turned out great. The only difference between Irish single malt whiskey and scotch really is the peated malt.
