My backset starts to get very acidic by then and I like to use 25% backset. Have you checked the PH of your ferments up in the 14th generation area? I'm interested how low it gets. A lot of the backset I have stored is ~3.0 for PH. That's about the same as Star-San.

It seems to take a bit longer to start fermenting the more gens I go
