I am in the market for someone to explain dunder to me. I read on another page that dunder mellows and gives rum a smoother more complex flavor. I usually do not put the yeast cake into the still but usually throw it away. Am I missing out on some better runs?

Had not read that one. it doesnt explain how to get dunder started. Is it just that yeast cake at the bottom of the fermentor? Do i save that and let it mold for a while and use that? Really want to get a good solid rum recipee going!!!!!!!!!

Hi jkru, Dunder is the liquid left after distillation. It is not the yeast cake at the bottom. Yeast has to be taken care of in a different manner to keep the strain in perpetuation.

Thanks Bushy. One more question and i'm starting my dunder pot. What do you do with the yeast cake? I have been throwing it away should I leave it in the still?

Hi jkru, your yeast cake should be left in the bottom of your fermenter and should never enter your still.

As to what to do with it,well, you could save it and reuse it if you decide that it imparts the flavor that you want. Or you can throw it away and try different ones to see what flavors the different types produce and then save the one you like best for continued use.

Myself I have'nt started saveing yeast yet as I'm still experimenting with different wash/mashes.
