"Is it possible to ferment blue agave sweetener to make tequila? If so, what type of yeast would one use? Distil in a pot still, right?

Thanx.....I just picked up a bunch from Costco and figured I'd try it out. What is ec1118?

"Likely not going to have that familiar profile for any number of reasons. But will ne a good experiment.
EC1118 is a go to yeast often used in wine.
